Gujarati Tindora nu saak

Stir fried gherkins curry

Tindora nu saak (ivy gourd curry) is very popular recipe in Gujarat, India. Very simple recipe and can be made quickly and also taste good. Usually, eat with roti or parathas.

Ingredients

  • Tindora (gherkins) – 1 ½ cup ( sliced)
  • Potato – 1 medium
  • Tomato  – ¼ cup
  • Oil – 2 tbsp.
  • Mustard seed – ½ tsp.
  • Jeera – ½ tsp.
  • Hing – pinch 
  • Turmeric – ½ tsp.
  • Red chili powder – 1 tsp.
  • Coriander jeera powder – 1 tsp.
  • Salt – as per test
  • Coriander – for sprinkle
  • Water – ½ cup (as needed)
  • Garam masala – ½ tsp.

Preparation

  • Peel one potato and cut it in small square pieces.
  • Wash tindora with water and cut in slices.
  • After that, Take one medium pan and add oil and heat on medium flame.
  • Now, add jeera, mustard seed, hing (asafetida powder). When jeera crackled, add potato & tindora.
  • Add turmeric and salt. Mix it well. After that, add ½ cup water and let simmer for 15 minutes.
  • Once done, Check if potato and tindora is cooked or not.
  • If you feel it’s not cooked, let simmer for 5 – 10 minutes more.
  • When potato and tindora are cooked, add tomato and other spices ( chili powder, coriander powder, garam masala).
  • If needed, add more water. Now let simmer for 5 minute.
  • Your curry is ready now. Take one serving bowl. Take curry in it and garnish with some coriander leaves.
  • Enjoy with roti or parathas.
