Khaman Dhokla is very famous street food made in Gujarat, India . It is gram flour pan cake made by steaming gram flour with other ingredients and tempered with mustard seeds. It taste delicious with green chutney or shahi rajwadi chutney.

Ingredients

  • Besan (gram flour) – 250 gm.
  • Sodium bicarbonate  – 1 /2 tsp.
  • Citric acid  – ½ tsp. ( you can also use lemon juice)
  • Salt – as per test
  • Water – ½ cup (as needed)
  • Sugar – 1 tsp.
  • Oil – 2 tbsp.
  • Mustard seed – ½ tsp
  • Green chili – 1
  • Curry leaves – 4-5
  • Coriander – for garnish

Preparation

  • First, take ½ cup water in bowl and warm it.
  • After that, Add besan, salt, sodium bicarbonate, sugar , citric acid (Or 1/2 spoon lemon juice).
  • Mix all ingredients very well. It will raise so take bowl accordingly.
  • Now, take one steamer and add water and let water boil.
  • Take one steamer plate and grease with oil.
  • after that, Add that mixer in plate and let steam for 10-15 minute.
  • To check if its done, poke a toothpick or knife in it. If come out clean means dhokla is ready.
  • Now cut dhokla in square pieces.
  • Take one small pan for making tadka ( tempering ).
  • Heat oil on medium flame.
  • Add mustards, pinch of hing (asafetida) and let crackle.
  • Add curry leaves, green chili.
  • Now spread that tadka all over on dhokla.
  • Sprinkle some coriander and eat with green chutney or shahi chutney.
