Gujarati Gol Papdi

Gujarati Gol Papdi Recipe (Sukhadi)

Ingredients

  • Slightly coarse Whole wheat flour – 1 cup (250 G Aprox.)
  • Ghee (Clarified Butter) – 1/2 Cup
  • Jaggery – 1/2 Cup
  • Dry ginger powder 1/2 tbl spoon ( Optional )
  • Finely sliced Cashew, Almond, Pistachio – for garnishing

Preparation

  • On a slow flame, melt ghee in non-stick pan.
  • Add coarse whole wheat flour and cook until its slight light brown in color. (Make sure not to over cook it ). Keep stirring continuously.
  • Once wheat flour is cooked, remove from flame and wait for 2 minutes.
  • Add jaggery and keep mixing until jaggery is completely mixed and melted.
  • Add Dried ginger power and mix well (Optional Add good taste and added when making to eat during winter)
  • Grease one plate ( thali ) with clarified butter and pour Gol Papdi mix in to it and spread it evenly with help of base of small bowl.
  • Sprinkle finely sliced dry fruits and let it come to room temperature.
  • Once cooled down, cut it in to shape of blocks, remove it carefully to make sure it don’t break down. (If it does not come out from plate easily, you can warm plate slightly to melt ghee.)
  • Best if Store it in air tight container.

Note: When roasting wheat flour, make sure to keep flame on medium.
* As a healthy winter sweet, you can add dried ginger power and grated coconut.
