Swaminarayan Khichdi is very popular dish made in BAPS Swaminaryan temple. This khichadi is slight different in taste and method of preparation compared to other khichadi. Swaminarayan Khichdi recipe is one of healthy food made with vegetables, rice, lentils and ghee. Very good food of choice for kids as well.

Ingredients

Swaminarayan Khichadi

  • Mix of Rice, toor dal (Split yellow pigeon peas) , moong dal ( Green gram split) – 1 cup
  • Mix vegetable – 1 cup (carrot, peas, potato, corn, beans)
  • Tomato – 1
  • Peanut – 2 tbsp.
  • Cashew – 2 tbsp.
  • Water – 5 cup
  • Turmeric – ½ tsp.
  • Garam masala – ½ tsp.
  • Salt – as par test
  • Red chili powder – ½ tsp.
  • Chopped coriander

For Tadka ( Tempering )

  • Ghee (clarified butter) – 2 tbsp.
  • Jeera (cumin seeds) – 1 tsp.
  • Mustard  – ½ tsp
  • Hing (asafetida powder) – pinch
  • Clove – 4
  • Cinnamon stick – 1 inch
  • Dry red chili – 1
  • Tej patta (Bay leaf ) – 1
  • Ginger – 1 tsp. (grated)

Preparation

  • Clean and wash mix of Rice, toor dal (Split yellow pigeon peas) and moong dal (Green gram split) with water. Take one bowl and soak for 15 minutes.
  • In shallow container / cooking pan, heat 2 tbsp ghee
  • Add cashew and peanuts and roast till slight brown. Take out in one bowl.
  • In pressure cooker, add ghee used in roasting of cashew.
  • Add jeera, mustard seed, clove, cinnamon stick, hing and let crackle.
  • Add grated ginger and fry till ginger’s aroma gone.
  • Now add vegetables and rice-dal mixer which we soaked in water.
  • Add all masala – (turmeric, red chili powder, garam masala, salt) and stir until it’s mixed.
  • Add 5 cup water and let simmer for 10 minutes.
  • Close lid of pressure cooker and let it whistle for 3 times. Let it cool down.
  • Once cooked, take one khichadi in one bowl and garnish with cilantro.
  • Enjoy with papad and yogurt.

Note: Ghee usually take less time to heat compared to oil
